A creamy pub cheese made with rich IPA, roasted garlic & caraway. Presented with house baked pretzel sticks. Selection of house made wild game sausages including Bison, Venison, Wild Boar, Ostrich, & Pheasant. Duck confit, Duck paté and seared Fois Gras.

Individual crock filled with a pottage of braised rabbit, fragrant vegetables, fresh herbs & rich Demi Glase’ and IPA. Topped with a golden brown buttery puff pastry crust.
Course 3 » WILD MUSHROOM & RIS D'AGNEAU SWEETBREADS
Tender sweetbreads sautéed with fresh herbs. Presented on a bed of brown butter with fried Sage and shaved Parmesan Reggiano

Fork tender Venison, Elk and Antilope all wood grilled to perfection. Presented on a bed of charred Vidalia onion rice with baby vegetables and a Pancetta and herb sauce.
Course 5 » MINT CHOCOLATE CHIP AVOCADO ICE CREAM
Freshly made Avocado Ice Cream with pure Mint, Florida sugar and cracked Belgium Chocolate. Presented with Hibiscus sauce. White chocolate sauce, fresh Florida berries and fresh mint.
